When I was younger, late teens and maybe early twenties, I had a thing about baking late at night. Weird, I know, but that's what I did.

An hour ago I went out into the front yard to gather apples in the dark. Dan followed me, and pretty soon was up in the tree handing them down. I didn't need a lot. They're yellow transparents, which apparently were quite a favorite among the old Finnish farmers, for reasons I have never been able to see because their texture is remarkably poor unless you catch them during the hour or so between green and fully ripe. However, I had pie crust in the fridge that needed to be used (that or find room in the freezer, and that wasn't going to happen). So I've got a pie in the oven, which I will be sampling at midnight or so.

And now I realize why it probably was that I quit doing it--baking late at night is cool, washing dishes late at night is not!
